Practical Animal Butchery and Food Preparation
A day’s class will involve a practical demonstration of fieldcraft and butchery for two freshly killed fallow deer. Practical hare/rabbit butchery will be shown as well. The practical session will include
- Knife selection and sharpening.
- Gutting and skinning an animal in the field.
- Identifying primary organs and checking for disease.
- Preserving skins and meat.
- Butchering an animal in the field to remove the edible meat.
- Carrying a deer carcass or hindquarters.
- Vac packing and food presentation
- You will take the meat/skins from both animals home with you.
Pricing:
A full day for one person will will cost $920 including the cost of the deer supplied.
Each additional person will only cost $58 (to a maximum of 4 for the day).
Location:
This class will be held within the Wakatipu Basin (Queenstown).
What to Bring:
For the butchery day you will be required to bring:
- A pair of gum boots (as blood destroys leather boots).
- A knife and sheath if you own one, however a knife can be provided. You will work hands on butchering what you will eat.
- Lunch will be provided probably venison. Dietary requirements to be communicated beforehand please.
